Dumpling Academy
Traditions preserved at the Franconian Cooking School in Burgellern Castle
Who of the older ones does not know this: After the Sunday church visit the mother stood at the stove and prepared the Sunday roast. Most of the time we had to involve children and helped with rubbing and rolling the dumplings. Only when I recently held our Bröggalatöpfla in my hands again did I remember our Sunday roast.
With the variety of "packaged dumplings" in the supermarket, the memory of how to make dumplings yourself is likely to fade in just a few years.
That's why we offer in our cooking school the possibility to learn this tradition of the production of our French national dish again in a convivial group, for absolute beginners or the passionate hobby cook.
Dumpling, shovala and savoy cabbage
Klees, Gließ, Glees, Dumpling... The main thing is self-made!!!
If I have Klees on my plate, I need some meat.
But how does the "clover-self-making" go ?
Most of us only know Klees quickly rolled out of the parcel or even mixed out of the carton. But that's far from being a do-it-yourself experience, let alone a taste experience.
Learn how to make dumplings yourself. Starting with grating the potatoes, roasting the Bröggala, rolling the Klees and cooking them. While the dumplings are in the pot, we make a Schäufala together and the matching Bamberger Wirsing. After the work is done, we eat together. And for the Doascht, there is of course a home-tapped beer from the Bamberg region.
